In a few weeks we'll be heading back up north so I decided it's time to start cleaning out the pantry. I found a container of Medjool dates and thought it would be a good day to turn them into Chocolate Coconut Energy Bites!


UPDATE: Since the original post, I have learned more about sugars and the affects on metabolic health. Dates are high in fructose, so limit your consumption on these. I will post an updated recipe without dates soon.


If you're looking for a healthy snack that's easy to make, these little energy bites are for you. They are tasty, satisfying and kid approved by our picky eater granddaughter, Isabella. I always bring a container of them for her when we visit, they're loaded with healthy ingredients and perfect for her lunch box or an afterschool snack. If she likes them, I'm sure you will too, especially all the benefits they provide
